I was lucky enough to be invited to stay this weekend with some good friends at their family beach house, here on the Oregon coast. The weather was gorgeous, and we had relaxing days filled with sleeping in, leisurely strolls on the beach, and of course, some incredibly simple, but delicious barbecue. After all, it wouldn’t be the fourth of July without having grilled something. Here we decided to grill some jumbo shrimp (seasoned simply with extra virgin olive oil, garlic, salt, freshly ground black pepper, and finished off with a squeeze of lemon juice), a few ears of sweet corn, and of course none of it was complete without making our own s’mores. Rounded out with a simple garden salad, this meal was exactly what this holiday weekend ordered. These are the days that make the summer great. Good food, good friends, and relaxing days on the beach. I mean, what more could anyone want? Happy fourth of July everyone!!!

I don’t know which looks more appetizing – the shrimp or ‘smores! I live by the beach and must admit there is nothing better than a beach BBQ with good friends. Happy belated 4th of July and thanks for sharing your scrumptious recipes!
Um… yeah, why didn’t I have that kind of weekend? That smore is wonderful as is simple grilled food.
