Another variation of my standard scone recipe, these lemon scones are moist, light, and full of fresh, citrus brightness. I like to add a lot of freshly squeezed lemon juice and zest to the dough, and finish them off with a glaze made simply from powdered sugar, fresh lemon zest, and enough freshly squeezed lemon juice to create a thick, but pourable consistency. I also like to glaze the scones right when I pull them out of the oven. This way the glaze is thin (so they aren’t too sweet) and it easily coats the scones, locking in their moist texture, while adding a nice shine. Perfect for a portable breakfast, early morning business meeting, tea party, or a leisurely Sunday brunch with friends.
