As a part of my first submission for Fight Back Fridays over at Food Renegade (as well as Vegetarian Foodie Fridays, Foodie Friday, Recipe Swap, and Friday Feasts), I thought I would share with you all this simple, but incredibly delicious recipe idea. I first had this strawberry toast at a charming little independent coffee house in Yachats, on the Oregon coast, called The Green Salmon. It was so simple, so ingenious, so luxurious, that we had to run home and immediately recreate it for ourselves. It has been a family favorite ever since. You start out by toasting a thick slice of your favorite bread (I used a nice sourdough that I picked up from my favorite local bakery, though they serve it at The Green Salmon with a delicious, freshly baked whole grain bread). Next, you slather on a generous amount of mascarpone cheese, and shingle some perfectly ripe, sliced, farm fresh strawberries on top (though blackberries, raspberries, and many other fruits would be equally amazing). Drizzle the top with your favorite local honey, and sprinkle the whole thing with powdered sugar. This is the perfect breakfast with coffee in the morning (or as a midnight snack for that matter). It’s sweet, tart, creamy, and chewy. (Sigh.) It really is a little piece of heaven.You must make this. You will not be disappointed. Enjoy!

This is the most beautiful toast I have ever seen! So many strawberry delights, but I am allergic:( However since I am of the creative sort, I will re-create a non-allergic version:) And saving to check out your “Food Renegade”
