It wasn’t until fairly recently that I had given much thought to making my own granola bars. I have been making my own granola for years (the flavor of which far surpasses anything you can buy at the grocery store), so I am not exactly sure why the concept never really dawned on me. I had to play around a little to get the right consistency (as I am typically not a huge fan of the crunchy granola bar), but with a little testing I think I finally stumbled upon it. These bars are chewy, nutty, sweet, and a little spicy. They combine old fashioned oats, coconut, sliced almonds, honey, a little butter, vanilla, ground ginger, cinnamon, nutmeg, and dried fruit (here I used apricots, cranberries, and blueberries… but really any dried fruit would be good). They keep well and retain their chewy texture for several weeks (when stored in an air tight container). Homemade granola bars. Who knew?
