I feel like I am forever searching for the quintessential blueberry muffin recipe that will light up my senses and emblazon my life with meaning. What I certainly do not want is another boring muffin that tastes like yellow cake mix and has no real blueberry flavor (which, let’s face it, eliminates the majority of blueberry muffins out there). Like the flavor of coffee for chocolate I really feel it is essential that anything made with blueberries also include both ginger and lemon. Never enough to steal the show away from the blueberries, but just enough to really make their blueberry-ness come alive: to create a three dimensional flavor experience. These particular muffins (though I have several very good recipes) rely on a swirl of blueberry jam in the batter before they are baked to turn up the volume on the blueberry flavor. It is surprising what a big difference that teaspoon of homemade jam does. That along with some ground ginger and a pinch of nutmeg make for a pretty amazing muffin. Here I topped them with a combination of granulated sugar and lemon zest to add freshness, and also a little sugary crunch. Delicious.
